It is very mellow and the sweetest of all misos, made of North American family farm organic soybeans and rice that are slow aged at ambient temperatures. It is our lowest salt/sodium miso. Shiro Miso is best suited for Summer dishes, and soup, salad dressing, dip sauce, marinades, and noodles.
Organic rice, whole hulled organic soybeans, water, sea salt, koji aspergillus oryzae
Miso Soup - basic 2" pieces Eden Wakame or 1 tsp. Eden Wakame Flakes 4 cups water 2/3 cup onion, thinly sliced 1/2 cup carrot, thinly sliced 2 Tbsp. Eden Shiro Miso, pureed in 2 Tbsp. Eden Shiro Miso, pureed in 2 Tbsp. water, or to taste 1/4 cup green onion, finely shaped Optional ingredients - Tofu (any form), shiitake, maitake leafy greens, daikon, louts root, leeks, root vegetables, cooked noodles or mochi is always good. Wakame flakes - just add, or soak wakame in cold water to cover for 5 minutes and dice before adding. Bring water to a boil and wakame, onion and carrot. Simmer 5 to 7 minutes. Reduce flame to very low. Add pureed miso and simmer without boiling for 2 minutes. Serve garnished w/chopped green onion.
