Couscous is not a grain, but a grain product made from semolina wheat flour when it is rolled into thin strands, crumbled into tiny pieces, steamed and dried. Whole wheat couscous is made with whole grain durum wheat flour, so it retains the bran and germ of wheat. It cooks just as quickly as the regular varieties and has a rich nutty flavor.
