Meringue Powder

If you need a meringue and do not have the eggs, you can use Meringue Powder. Use as you would any meringue, on pies, in angle food cake, or soufflé recipes.

Ingredients: Sugar, maltodextrin, corn syrup solids, dried egg albumen, gum Arabic, calcium lactate, modified corn starch, lactic acid, sodium aluminum sulphate, cream of tarter, citric acid, sodium carboxy-methylcellulose, locust bean gum, xanthan gum, dextrose, agar agar, artificial flavour.

Directions: Place 1 lb of meringue powder and 10ox warm water in a clean bowl. Stir until dissolved then beat with wire whip at high speed until desired peak (approx. 7 minutes). For one pie mix 9 Tbsp of powder and 5 Tbsp of warm water.
